What Is An Autoimmune Disease?
An Autoimmune disease is a condition in which your
immune system attacks itself. The immune system
normally guards against bacteria and viruses. When
it senses these foreign invaders, it sends out an army
of fighter cells to attack them.
Normally, the immune system can tell the difference
between foreign cells and your own cells. However if
you have an autoimmune disease, the immune system
mistakes part of your body as foreign and it releases
proteins called auto antibodies that attack your
healthy cells.
When you have Celiac disease, when you eat gluten the
immune system attacks the small intestine and causes
inflammation.

Vitamin B12 Deficiency
Nutrient deficiencies, due to malabsorption are common
in people with Celiac. These deficiencies occur because
some nutrients are unable to be absorbed in the intestine
where damage has occurred from the disease.
Common deficiencies include iron, calcium, folate
and B12.
Symptoms of Vitamin B12 deficiency include: tiredness,
lack of energy, shortness of breath, increase heart beats, and
pale skin.
Vitamin B12 and folic acid work together to help the body
produce red blood cells so it is recommended to keep B12
in your diet through consumption of meat, dairy products,
and eggs.
If you are vegan, use products that are fortified with B12,
and/or add a supplement to ensure your B12 intake
is adequate.
