Day 1 Of 3 Did You Know That These Foods Contain Gluten???????????

Celiac disease, is an inherited condition that affects nearly 1%

of the population.  Many non celiac individuals also experience

varying degrees of gluten sensitivity.  While some gluten

containing foods , like bread and pasta are evident and easy to

avoid, others are surprisingly not.

1. Corn Flakes-  while corn is naturally gluten free, most brands

of corn flakes aren't safe.  Most cereals are sweetened with Malt.

2.  Oats- Pure oats are completely safe for those with Celiac disease,

but studies have shown that most oats are processed in facilities with

wheat and barely.  Look for labels that say gluten free on the box.

3.  Ice Cream-  Who doesn't love an ice cream cone?  Ice cream can

be gluten free, but depends on the ingredients.  You need to always

check the label.

4.  Couscous-  Most couscous looks like rice, but it is made from

semolina, a type of wheat.

5.  Meat Substitutes-  Faux meat options aren't just for vegans anymore!

Many of these products are gluten free, however some contains gluten.

6.  Deli Meats- Fresh, unseasoned meat is naturally gluten free.

However some meats add starches in their seasoning.  Certified gluten

free is always good to look for.

Vitamin B12 Deficiency

A vitamin B12 deficiency may take years to become
apparent.  Symptoms tend to appear when the body's
stores of vitamin B12 begin to run out.

Vitamin B12 can be found in food such as meat,
salmon, cheeses and eggs.

Carnivores can usually get all the vitamin B12 their
body needs from their diet.

When the small intestines fail to absorb nutrients
from food, a deficiency can occur.

FDA Relaxes Food Labeling Rules During Covid-19

Usually, when a food manufacturer makes an ingredient change,
they must produce a new label for all the changed products.
However, Covid-19 has changed that for now.  The Food and
Drug Administration is relaxing some labeling requirements
for certain ingredients in food in the U.S.

The move will give food manufacturers the ability to make
small changes without making label changes.  That may mean
adding, omitting, or blending ingredients to meet the
product needs.

The guidance states that ingredients used as substitutes should
not alter any voluntary nutrient or health claim, such as gluten
free.

The safety, claims, and prominence section of the guidance
specifically states that no gluten ingredient can be used
as a substitute for a gluten free ingredient.

For more information, questions and answers, read the
FDA's page on food safety and the Coronavirus Disease
2019.
