Lactose intolerance is when a person has difficulty
absorbing and digesting lactose, a sugar found in
dairy products. When a person is first diagnosed
with Celiac disease the lining of the gut is damaged
from eating gluten which can mean that the body
does not make enough lactase.
Symptoms of lactose intolerance are, nausea, bloating,
gas, stomach pain and diarrhea.
Once the stomach lining has healed, most people are
able to tolerate dairy again.
As a Registered Dietitian and a mom of a son with Celiac, I want to educate on a healthy gluten free diet.

What Is Gluten??

Vegetarianism and Celiac Disease
Being a vegetarian and having Celiac disease means
that you are consuming a more limited diet. You will
need to take extra care to not develop any deficiencies.
Some alternative sources of nutrition:
Protein- eggs, tofu, nuts, seitian, beans
Calcium- tofu, dark green vegetables, seeds, beans, dried
fruit, almond milk
Vitamin D- eggs, yogurts, almond milk and supplements if
needed.
Iron- eggs, beans, kale, nuts, seeds, broccoli
Vit B 12- Fortified cereals, and supplements if needed.

Tamari
Tamari and Soy sauce are similar in color and taste,
however there is actually a number of differences
between the two. Both soy sauce and tamari are
byproducts of soybeans, but the most important
difference is the presence of wheat. Tamari is
not processed with wheat however soy sauce is.

What Is Wheat Grass????
Wheat grass is the fresh sprouted leaves of the wheat plant.
Wheat grass is full of fiber, iron, potassium, Vitamins A, C,
B and K. It is used in many juices and supplements.
Is it gluten free?
The grass itself does not contain gluten, if it is cut before
it can grow seeds. Unfortunately, there is a risk of cross
contamination. It is recommended to avoid unless it is
certified gluten free.
