Soy lecithin is widely used in foods as an

Gluten Free Food Claims
The U.S. Food and Drug Administration has
established a gluten limit of less than 20 parts
per million for foods labeled as gluten free.
This is the lowest level that can be reliably

Wheat Free Vs. Gluten Free
It's important to remember that wheat
free doesn't always mean that a food is
gluten free, as it may contain other
gluten sources. Conversely, if a food
is labeled as gluten free it cannot and
will not contain wheat.

Define Gluten
Gluten is the name for certain types of
proteins found in wheat, barley and rye
and their derivatives. Gluten is found
in breads, baked goods, pastas, but also
hides in foods like soy sauce, licorice
and some medications.

Define Celiac Disease
Celiac disease is an autoimmune condition
triggered by the intake of gluten in people
predisposed to the disease. It is estimated to
affect 1 in 133 people in the U.S., but many
go undiagnosed.
Gluten is the protein found in wheat, barley
and rye. When someone with celiac consumes
gluten, the immune system attacks the small
intestine, which affects the absorption of
nutrients.
